Have your stamina at first quarter when there is 600m remaining.
Then, drive at 300m. You will usually win most races by doing this.
Entering more races:

When asked to be a horse's jockey, always say "Yes". You will then
have several horses to choose from in a race. The more horses you have,
the more races you can enter.
