I was concerned the other day that I needed to change some parts in my Ford, but got confused about the classifications of the different certifications. A technician I know said to definitely check CAPA, but these parts cost a lot more than I thought they would. How much better are auto parts with CAPA certification than regular parts?

How much more expensive are they? Maybe they were unscrupulous sellers who intentionally inflated the price? Because when I bought a rearview camera for my BMW from T1A Auto https://www.t1aauto.com/ the website also listed CAPA certification, but the price was market price. It just says that the part you're buying meets or exceeds the quality of the original equipment. I think this is much better than buying worn out parts that may break in a few months. Even if the price is a little higher than you thought, consider it an investment in the longevity of your car.
