Sweet Potato Spiral
I used my friend Christa’s recipe, but subbed a white sweet potato instead of a Russett! Find her easy to follow recipe here: https://www.instagram.com/tv/B-dlBm8JI3W/
(other modifications: I used olive oil, sprinkled some water in the pan to keep everything steamy, & topped with parsley).
Healthy Strawberry Pâtes de Fruit (from the Autoimmune Meal Prep Cookbook: https://amzn.to/3mvYmIn )
Ingredients:
1 pound fresh strawberries
1 + 1/3 cups water, divided
3 Tablespoons gelatin powder
1 + 1/2 Tablespoons maple syrup, more to taste
Directions:
1. Lightly grease a 9x5 glass baking dish
2. In a food processor equipped with an S Blade, add the strawberries and 1 cup of the water. Process for 30 seconds or until smooth.
3. In a small bowl, combine the remaining 1/3 cup water and 3T gelatin powder. Mix well, making sure all powder is dissolved and you obtain a gel-like mixture
4. Transfer the strawberry mixture, gelatin, and maple syrup to a saucepan. Warm over medium-low heat for a few minutes, stirring constantly, until all ingredients are well combined. Do not boil.
5. Pour the mixture into the greased dish and refrigerate overnight. Cut into pieces and store in an airtight container for up to 7 days. Do not freeze.
Beet and Apple Salad with Chicken & Homemade Sunbutter Dressing
Salad ingredients:

Sunflower Seeds
Dressing Ingredients:
1/3 cup sunflower seeds, soaked overnight, drained, + rinsed
1/4 cup + 1 Tablespoon olive oil
1 clove garlic
1 teaspoon lemon juice
1 Tablespoon red wine vinegar
Pinch sea salt
Pinch black pepper
2 Tablespoons filtered water
Directions: Put all ingredients in a high powered blender and blend until smooth.
